1st off, if you're going around Xmas then it's likely to be a bit on the parky side in any of the suburbs, but downtown will just be chilly.
*hint Toronto itself is one big city - find out where you'll be staying as there's municipal parks that you most like can fly in!
*hint Toronto - is pronounced T'rono by the locals
Although there are a few Canadians on the forum (hi Ewing!) it's a BIG COUNTRY and things are very localised. It's like asking someone in Cornwall what the ridings like in Scotland - Ontario is the province/state you need to localise the searches on also.
As for attractions, well theres the Rogers Centre (aka Sky Dome where the Blue Jays hang out). Next door is one humungous Tower (can't remember the name) something like 500 ft tall, and you can scare yourself s**tless looking down through/walking across a glass floor.
If you were going in the summer I'd recomend the city bus tour - shows you everything you need to know and more! but again might be a bit chilly for a couple of hours on an open top bus.
For those so inclined there's shopping, but there's shopping everywhere. As for kiting itself, you'll not find much during the winter months - Canadian's are daft but they're not stupid! The main scene is kitesurfing, as T'rono is on a big lake - but what they class as T'rono more likely covers an area almost as far as Niagara.
Talking of Niagara, thats another place to visit - regulalry it ices over so it must be cold!!!!
Stating the bleedin' obvious do a few searches on google - Toronto Tourism and Toronto kites should answer some of your needs.
