Mine has a double ended zip and a press-stud flap. I Unzip upwards until I can clear the harness hook, then do up the studs below the hook. Simple.

I also have the double ended zipper on my parker so I unzip from the bottom to clear the spreader bar.

 

I'm fortunate enough to be able to ski on a pond in my backyard. If the weather is moderately cold I simply wear clothes that won't interfer with the harness - I usually dress pretty light as I tend to get pretty hot and sweaty after only 1 or 2 passes across the pond. Depending upon climate and conditions, that won't be an option for most so either get a coat with a double ended zipper or fly unhooked

The guys in norway where cutting a hole in their jacket and installing zippers on velcro straps. They seemed to work very well, even in -20'C
