I reckon that it would be a mistake to go for a water kite if you are just starting out with snow kiting.
My feeling is that they are much more dangerous because they keep their shape, and hence the power stays on.
On open-celled kite will just collapse when you pull the brake lines.
They are probably going to endure the inevitable bangs and crashes starting out for similar reasons. A water kite is essentially sealed so a crash risk busting the seams.
Has anyone tried attaching a depower system to a standard foil?
There is something called a UDSII which is basically a complicated pull system to allow the kite to arc and thus loose power.
Does this sort of things work well, particularly on a 4 - 5 meter kite?

Has anyone done any serious damage to their ankles
on a land board?
A few weeks back I got freaked out by the speed I was going, jumped off and hurt my ankle a bit. ( Yeah, I know dumb idea. I was worried about coming off and just thought I'd get it over with. )
Anyway, are twisted ankles a real hazard and do people tend to wear special footware?
