Plenty of shell free areas to launch and land. Just pick your spot, like any beach really. Had flexi, GK, F.one, Cbrinha, none of which have been damaged by shells.
If you take the stoppers off and put them in boiling water then they soften. Push something oversize into the cavity of the stopper. This will stretch the stopper so when it cools it fits tight in the valve. Simples!

If you fly with him it is easier for him to follow you up wind. Coaching is so much easier when you are a get yards away. Spent most ogre our last sess looking back over my shoulder shouting "edge hard and wang it!" Also you can assist if he needs help further out. Personally i don't expect to have a great sesh if i am out with my boy. This year has been about getting him riding independently. The sacrifice of my own sessions has been well worth it.
