Melia Gorriones Fuerteventura is quite good (though people will complain about the gusty wind). I have been twice for the simple reason that the wife would not go to Egypt and that you can kite straight from the hotel. With having kids, I might only get the chance to go out for an hour or two a day (if I am lucky twice) so having a spot where you can be on the water kiting 10 minutes after leaving the pool area is great.
I have only been in June, wind is gusty be fine (the rescue is good if you have any problems), when the lagoon fills (it is tidal so check it is available when you are there) there is no worry about the off shore wind. The kiting area is interesting given the different stages of the tide and the channels, lagoons that form.
The kite centre is fine, but I don't think there are that friendly. The hotel is quiet nice (genuine 4 star), some of the mass produced food is average, but there is lot's show cooking, fresh fish, meats which are very good.
Would I go there without young kids, probably not, but I went back the following year because it works well as a kiting family holiday.
If you do go, hire a car (very cheap) and don't both with transfers.
